Today I am ....

In the kitchen
Bread and butter pudding.
serves 4

Ingredients
  • butter for greasing
  • 12fl oz/350ml milk
  • a couple of drops of vanilla essence
  • 3 eggs
  • 2oz/50g caster sugar
  • 1oz/25g softened butter
  • 6 slices white bread
  • 2oz/50g raisins,soaked in hot water
  • rind of a lemon finely grated
  • 2pint/1.1 litre pie dish
Preheat the oven 180c.
Grease the pie dish.
Place the milk and vanilla in a pan and bring slowly to the boil.
Remove pan from the heat and leave to cool
Beat the eggs and caster suger together,untill mixture is pale and thick.
Strain the milk into the egg mixture,whisking untillcombined.
Butter the bread, cut into quarters and layer with raisinsand lemon rind in the pie dish.
The top layr of the bread should reach up to the rim of the dish.
Pour the custard on top, then cook in the oven for about 40 minutes,or untill the custared is set.
Place under a hot grill to crisp the edges.

  1. Yummo - hadn't had B&B Pudding since I was a child, just after the war, when all sweets were made at home out of what was available.

    Must try making some!

    2. Can I have your recipe for spinach bake? I cannot eat spinach but I do eat Asian Bok Choy and reckon that would substitute.

    3. Hi JohnD I wrote the recipe on my post today if you have not got buffalo cheese you can use ordinary cream cheese and add whatever flavours you like.

  3. Bread pudding...my favorite dessert! Found a restaurant (where I used to live) that had excellent bread pudding (better than my Mom used to make) ate it once and they went out of business! :-( I might have to make me some ginger beer...the spinach bake looks yummy! And just look at your garden after the rain! Beautiful!
